4 apples, like Fuji, Honeycrisp, Macintosh, Red Delicious 1/4 cup brown sugar (dark or light) 1/4 cup old-fashioned rolled oats 1/2 teaspoon cinnamon 1 tablespoon butter, divided in four 1 cup hot water Optional extras: raisins or other dried fruit, chopped nuts, cream cheese, peanut butter, nutella To serve: ice cream Pre-heat oven to 375°F. Remove the core of the apples, cutting to within a half inch of the bottom of the apple and creating a well roughly 3/4-inch wide. This is easy to do with an apple corer, but can also be done with a melon baller, grapefruit spoon, or a paring knife. Mix the brown sugar, oatmeal, cinnamon and any extras in a bowl. Divide this mixture between the apples, packing the wells firmly. Arrange the apples in a baking dish (like an 8×8 Pyrex dish), and top each one with a pat of butter. Pour the water into the bottom of the dish and cover loosely with aluminum foil. Bake for 20 minutes and remove foil. Continue baking uncovered until the apples are soft and the brown sugar has melted into a syrup, an additional 20 to 30 minutes. You can test the apples by poking a paring knife through the oatmeal mixture and into the interior of the apple; it should slide into the apple easily with no resistance. The skin on the apples will also become wrinkled and soft by the end of cooking. If desired, serve with a scoop of ice cream and can be reheated in the microwave or eaten cold. Sinfully Delicious Cast Iron Apple Pie with Homemade Caramel SauceGet ready because this is so good and it is addicting and you will go to work the next day thinking about when you can come home and have another piece. It is not for the calorie counter, it is for those who savor a good and who feel no guilt in wickedly wonderful calories that come from good food. Apples:
Peel apples and slice to 1/2 inch thickness, toss with brown sugar and flour. Melt 1/4 c. butter in saute pan add above apple mixture. Cook 5 – 8 minutes until sauce has thickened and apples are softer, but still firm. Set aside. Preheat oven to 350. Cake:
Mix the above ingredients together. Fit 1 prepared pie crust into a 10″ cast iron skillet. Spoon 2/3 c. apple mixture into skillet on top of pie crust. Even it out, then scoop batter on top of apples, take spatula and spread evenly on top. Top batter with remaining apples. Bake at 350 for 1 hour. Remove from oven serve warm or cool with ice cream and the below recipe for Apple Cider Caramel Sauce. (The Apple Cider Caramel Sauce is a necessity; it is the bomb of sauces and it can be served with raw apples, on top of pancakes, muffins or toast. It is simply the definition of yummy.) This first step is essential. I know this because Michelle made the first batch and it never thickened, I asked her if she let the apple cider reduce to half and she gave me a blank look. We began again. Boil the apple cider until it reduces to half (why not just add a 1/2 c. instead of a c. ? I don’t know, but don’t try it. Boil, boil, boil) Then add the remaining ingredients. Bring to a boil for 2 minutes, remove from heat and let cool. Caramel sauce will become very thick. Refrigerate to keep, microwave for 10 – 15 seconds to reheat. Slice pie, add a scoop of vanilla bean ice cream, do not drizzle but pour caramel sauce over pie. Indulge. Farm Chicks Cookies!These are our all time favorite cookies in our house. Preheat oven to 350 degrees F. In a large bowl, with an electric mixer, cream the shortening, granulated sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chips and coconut, mix until combined. This is what I do for all my cookies (you may skip and go on to the next step, but if your on the meticulous side of life like me when it comes to cookies and like nice, even round cookies then……. divide dough into thirds, create a log out of each, wrap in wax paper, refrigerate for 30 minutes. Then slice and place on cookie sheets lined with wax paper) Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 10 – 13 minutes. Transfer the cookies to a wire rack to cool.
